Kimichi Day with Mom

Kimchi Day Next week we take our long drive to Boulder, Colorado for our big family move. Last Friday we moved everything we owned into a giant pod to be shipped across country. This week we are staying with my parents in Bethesda, Maryland where I grew up. It has been nice to be here with my kids and enjoying the benefits of living in this suburbaurban (this is a word my son uses to describe the neighborhood) area. The best was that was able to help my mom make her amazing kimchi. This is a traditional staple food of South Korea. A spicy fermented cabbage that you eat at practically every meal. My mom is known for her kimchi. I have made this dish a number of times but never comes out the way it should. Tasty but never ever as good as my mom’s. Well she said one of the secrets is that she gets her red pepper flakes shipped her Korea through her sister. She actually purchases Korean red peppers from local farms that grow them organically. Then she sun dries them and then gets them ground. Wow! The time and commitment really shows through in the taste and color. It was amazing to sit on the kitchen floor, mixing all the ingredients by hand and individually covering the cabbage leaves with the red pepper paste mixture. We had so much fun talking and making this wonderful dish. It tasted amazing and will be even better once it is allowed to ferment. More importantly it was made with pure ingredients and love.
